fig and proscuitto

This is one of my favorite appetizers: Proscuitto di Parma slices spread with fig jam.  Add chopped fresh fig, if available, shaved Parmesan cheese, chopped pine nuts and arugula.  Maybe a little thinly sliced red onion and crushed red pepper. Roll up like a burrito and drizzle with honey.

If you've got leftovers, turn them into a salad.  Baby Arugula as the base, then thin slices of Proscuitto, red onion, toasted pine nuts, chopped figs and a honey balsamic vinaigrette.
