week night salmon

Quick. Easy. Healthy. Yummy. I probably make this once a week.

 

Salmon with Avocado and Roasted Garlic

serves 4

 

  • 1 1/2 pounds salmon fillets, about 2 large

  • 1 large ripe avocado, sliced thinly

  • 1 large bulb of garlic

  • 3 tablespoons extra virgin olive oil, divided

  • juice of half a lemon or lime

  • 1/4 cup chopped parsley (basil or dill also works)

  • salt and freshly ground pepper, to taste

Preheat oven to 375 degrees.  Cut the top off of the bulb of garlic and place cut-side up in a small square of aluminum foil. Drizzle one tablespoon of olive oil over the top and sprinkle with a bit of salt and pepper. Wrap tightly in the aluminum foil and place directly on an oven rack.

After 10 minutes, season the salmon with salt and pepper and drizzle with the rest of the olive oil.  Place in a small baking dish or sheet pan and bake for approximately 10-12 minutes, or until desired doneness. Remove both salmon and garlic from the oven.

Plate the salmon and place the sliced avocado on top, divided evenly amongst the 4 servings. Squeeze the citrus juice of your choice on top.  Squeeze out a few cloves of the roasted garlic out on top of each serving and sprinkle with a bit of the parsley.
