5 Sandwiches You’ve Got to Try

Meatballs, tuna salad, sausage and peppers: all can be found in my fridge in the form of leftovers from dinner the night before. Don’t throw them out! Put them in a baguette and you’ve got an easy weeknight diner or quick lunch.

The Mini Meatball

2 -3 meatballs, tomato sauce, provolone cheese and a little Parmesan. need a great meatball recipe? try mine.

The Spicy Tuna

Make the tuna salad: 1 6-oz can tuna in olive oil (good quality, preferable Italian). 2 tbsp minced red onion. 2 tablespoons mayonnaise. Kosher salt and pepper, to taste. 15-20 Peppadew peppers, plus one tbsp juice from the peppers. Juice of one large lemon. 6 fresh basil leaves, chopped.

Mix together and make the sandwich, adding olive oil or may to the bread, if desired. Also great on a lettuce wrap.

Roast beef, provolone cheese, sweet peppers, horseradish mayo & oregano.
